I recently started DDS1 and I was under the impression that being in your demon form was mandatory and just over-all the stronger option, but then seeing the party in their human forms, I'm confused as to when would you choose to face enemies as humans.
Like, is there some type of attack that as a human you're stronger against than as a demon, or something?

Enemies that are weak to gun attacks are when the human form is most useful. All bird-looking demons seem to qualify, but there are others outside of them. Scan to make sure.
There are an item in the second game that lets you pass a turn without any cost by switching from demon to human and back, which has its advantages.

If I remember, the only way to consistently kill omoikane in the first game is to shoot them with a high-powered gun. And omoikane are so worth the hassle!
Human form is immune to expel attacks, too, which is occasionally useful.

This is the truth. Omoikane is basically immune to everything except bullets, and they are the only way to defeat him.
Also: many types of ammo can cause status effects, and they seem to have an abnormally high rate of success compared to spells. This seems to be more important in DDS2 though. I'm also unsure if the attack counts as a ailment in terms of hitting weaknesses.
