It's much easier, and you'll get 1-2 hits more to survive from enemies (they'll do less, and you'll have slightly more hp in soul form)
but you'll get less souls (quite a bit) so you'll also level slower...
best thing about not having the even, though, is the lack of tendency events, like BP Satsuki, and a lot of BP monsters in other levels.
If you aren't that far, I believe you can make a new game in offline mode and everything will be neutral. You can just play like that until the event is over.

Remember there was nothing exclusive about this event. Pure black tendancy can be had anytime, if you play to achieve it.

Maybe its because I'm not on NG+ or anything, but I'm loving this event. I love that theres a ton of Black Phantoms, and invaders, and monsters are harder. I've skyrocketed through soul levels, equipment, and upgrades.
I went from being Soul Level 36, and using a Crescent Falchion+1, Compound Longbow +3, and having completed 1-1, 1-2, and 4-1.
Now I've got... Soul Level 70, Demonbrandt, Meat Cleaver, Wrath of God, Viscious Compound Longbow +3 (okay, farming still sucks :P). I got to kill Miralda on PBWT and get the axe, as well as the full Brushwood set (now to pump the End).
Level wise.... I realized I needed Ed so I cleared 2-1, 2-2, and 2-3. I actually managed to one shot Flamelurker, without Blue Phantoms. Then I got bored, so I went in and having done 1-3 like seven times (I use it as my farming ground as a Blue Phantom).
I've gotten really good at fighting BP's (Though with Demonbrandt its just a matter of correctly ambushing), though one did get me to kill Graverobber Blige because I wasn't smart about how wide my swing arc was.
Of course, I'm sure all this would change if I was in NG+ :P

I created a new character to see if I could get past 1-1 in pure black. I made a temple knight because I need a high faith character for the Saint's trophy. I was expecting to get pwned but I did fine. It was hard to get used to a different attack speed though. My first character was a Soldier.

All NPCs show up as lasting Grey Phantoms to both Blue and Black Phantoms. Which is of course only practical, as it prevents other players from GRIEFING THE HOST INTO THE GROUND. So what you're saying is impossible.

Except the BP can hump the Grey Phantom vendor to lure the host into hitting the vendor.

This one. He basically sat ontop of him to heal because I couldn't do anything about it. Then I got annoyed and just killed them both.
Sure, I cut off my nose to spite my face but it was just them forcing me to use heavy arrows and kill things quicker.

To answer the original question
"What was the game like before the event"
It was enjoyable
During this event, on NG+
Annoying pain in the ass, had I started the game in this mode I would have regreted the purchase. It made a few things easier to accomplish, and the rest of the game went right into the toilet
Now that the event has ended and despite the difficulty of NG+
It is enjoyable again, I don't have monsters 1 shotting me, or guard breaking me and a black phantom monster 1 shotting me after that.

It's just as good as it ever was. Ignore the cry babies.
I just found out today that this event even existed, I bought the game on Saturday, spent about 4 hours on 1-2, 4 hours on 2-1, yet 2-2 was surprisingly easy and only died once (albiet in body form ).
Tried 4-1, got ***** by the BP at the start, tried 3-1, got almost to the end but 1 shotted by another BP.
I'm really glad that wasn't actually the standard game, can't wait to get back to it tonight and see what difference it makes.
I made it to lvl 31 by completing 1-1, 1-2 and all of 2. What do you reckon I would have made it to without this event by now?

since you failed 4-1 due to the BP at the start you missed out on a good leveling area in 4-2. so had the event not been in effect you may have beaten that map and you could have leveled fairly fast. though on the flip side, because the game was in pure black, everybody earned more souls for everything, so it may have evened out a little.

Assuming you weren't dying, then dying while retrieving your souls...
