Depends on style.
Insanity Catalyst is great for spells. Really noticable damage boost.
Homing Soul Arrow is fun for PvP and increasing damage dealt to someone who blocks a lot (unless they have the dark silver shield or a dark shield in general).
Banish is okay, but you have to be within arm's reach (not weapon's reach) for it to connect. Good for getting rid of Tank-style PvP-ers.
Soul Thirst is probably the best overall choice, as it basically lest you double your soul intake at the cost of magic power. Pure mages may want to go with Homing arrow to conserver MP unless they stop to regen a lot (moon/crescent/weapon, fragrant ring) or have a lot of spice.

Long term if you are a real caster you need alot of spice anyway none of the regens really cut it for combat purposes not even a +5 cresent which is the highest mana regen in game. If you are going for the platinum trophy you will get them all long term anyway. I took the wizard spell first.
Personally there is a much better catalyst than the insanity... It doesn't hit as hard but it doesn't have that one disadvantage insanity does and is alot more "versatile" I will say. For real casters it is the must have, not insanity.

Curse is stronger but it takes 3 memory slots while light only takes 2.

I'll list it all out in the order you've given them.
Insanity Catylyst is a good item. The "downside" is that you have half as much mp, if you're a heavy caster, it won't really matter in the first place if you have all or half as you're going to be chugging spices down like water anyways. In the long run, however, if you are a good caster, you'll probably be using the talisman of beasts for both spells and miracles which eliminates the place this thing has.
Homing Soul Arrow should be a requirement if you're a caster planning to be a caster in new game plus. It makes you ambush proof. If you're heavy casting then it also makes you unkillable against silly enemy ambushes.
Black phantom invades? You don't have to worry about him hitting you from hiding. You can cast this spell and eat something as it protects you. The clever applications for this is endless. If your magic is high (Old Monk's funky hat and the Ring of Magical Sharpness) then your opponenet won't dare hit. The only problem is that this spll is only good for those functions. Casting it for the purpose to attack is silly against a black phantom.
Next up is the soul thirst. This spell is the all and be all of boss fights. It's hard to choose between this and the spell above. However, it lasts incredibly short, has the same typical magic cast time and costs a LOT of mp. (I believe it's 200). It sticks with other soul boosts items and it makes it easier to single shot through the game a first time through without having to extensively farm. However, sense you CAN farm to get that much souls albeit slower, making the call to get or not to get is simply up to you.
Banish is a must if you aren't good at pvp. I'll say it again. It is a must if you aren't good at pvp. It makes it easier to keep your blue phantom buddies from potentially biting the dust and it also gets rid of your pesky nuisance. Speaking from a phantoms presepctive, banish is the bane of black phantom pvp. If you aren't confident in pvp, get this spell.
I think that about sums up all the options. Let me know if it helped or not.
