Can anyone explain to me how the class system works for Eternal Poison?
I am wondering since your main party's levels are kept for New Game+, then does that mean that you are stuck with a character's particular class forever?

I'm pretty sure the story characters change classes at a certain level, and you're stuck with whatever you picked, assuming they hit that level in your previous playthrough.

If that is the case, then this will be my only gripe with the game then.
I was looking forward to seeing the different classes for each character. Becuse, support classes will be awesome for better leveling, but once you are level 30, then what?
Maybe I will do multiple saves then. Like, have on initial save with level 1 characters that I won't touch until I have beaten that character's story, then I can pick which classes I really like. But, this possibility is making my head hurt, the more I think about it.

O. That is simple enough.
Will the previous Lexicon still be intact if I start a New Game? Or would I have to fill it up again? Since I will be starting a totally new file? Does the game differentiate from a New Game and a New Game+?
Maybe my brain is just too overworked from college.

As long as you don't save over your old saves
At (I think?) level 12, your main characters get to choose between two classes, and when they continue to level, they'll start to get a specific set of abilities and stat increases depending on what you chose.
And, yep, the only way to see the other choice is to start a character from scratch. :/
Once you reach level 30, you're done! And it's a VERY VERY good idea to get all your "main characters" (Olifen, Thage, Ashley, not Marie or other sidekicks, etc.) to 30 if you plan on seeing the game through to the very end. And if you make them as badass gear-wise as possible.
If you start a new game +, I think any entries that you completely filled in (PP, Skill, and Item) will be there, but I can't remember if partially filled ones transfer.

The info you got will transfer (like if you only got the skill) but you won't be able to buy the majins

If you got all the info you'll be able to buy the majins on a new game +.
And the class change isn't set to a specific level, as far as I can tell. I know at least one of my characters didn't class change until level 14 or 15.

For that charater
every time you will play that character will change class at the same level
